Ingredients

  • 4 c. flour
  • 2 Tbsp. baking powder
  • 1 tsp. salt
  • 2/3 c. shortening
  • 1 c. sugar
  • 2 egg yolks
  • 2 c. milk
  • 2 egg whites

Instructions

  1. Combine flour, baking powder, and salt in a bowl.
  2. Beat shortening until fluffy.
  3. Add sugar and egg yolks to the shortening and beat until fluffy.
  4. Alternately stir dry ingredients and milk into the shortening mixture, just to moisten.
  5. Gently fold in beaten egg whites.
  6. Divide batter among well-greased muffin pans.
  7. Bake in a 400°F oven for 20 minutes.
