A hearty holiday breakfast casserole featuring sausage, eggs, bread, and cheese, baked to perfection. Perfect for family gatherings and brunch celebrations.

Ingredients

  • 1 lb. sausage
  • 1 onion, chopped
  • 1 green pepper, chopped
  • chopped celery
  • chopped chilies
  • 1 tsp. salt
  • 1 tsp. dry mustard
  • 2 c. milk
  • 6 to 8 eggs, slightly beaten
  • 6 slices white bread, cubed

Instructions

  1. Fry sausage in a skillet.
  2. Drain, reserving 3 tablespoons of sausage drippings.
  3. Use the reserved drippings to sauté chopped onion, green pepper, celery, and green chilies.
  4. Mix all ingredients together including cooked sausage, sautéed vegetables, milk, beaten eggs, bread cubes, salt, and dry mustard.
  5. Place bread cubes in the bottom of a greased 9x13-inch casserole dish.
  6. Pour the mixture over the bread cubes.
  7. Top with additional cheese if desired.
  8. Bake at 350°F (175°C) for 1 hour until golden and cooked through.
