Holiday Breakfast Casserole

Instructions
- Fry sausage in a skillet.
- Drain, reserving 3 tablespoons of sausage drippings.
- Use the reserved drippings to sauté chopped onion, green pepper, celery, and green chilies.
- Mix all ingredients together including cooked sausage, sautéed vegetables, milk, beaten eggs, bread cubes, salt, and dry mustard.
- Place bread cubes in the bottom of a greased 9x13-inch casserole dish.
- Pour the mixture over the bread cubes.
- Top with additional cheese if desired.
- Bake at 350°F (175°C) for 1 hour until golden and cooked through.
