Ingredients

  • 8 oz. package dates
  • 1 1/2 cups boiling water
  • 2 teaspoons baking soda
  • 1 1/2 cups sugar
  • 2 eggs
  • 3 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chopped pecans

Instructions

  1. Prepare a loaf pan by lightly greasing it and coating with plain bread crumbs.
  2. Mix chopped dates with boiling water and baking soda; let cool.
  3. Beat eggs in a large bowl; add sugar and mix well.
  4. Add the cooled date mixture to the egg mixture and stir thoroughly.
  5. Gradually add flour, baking powder, salt, and chopped pecans to the mixture, stirring until combined.
  6. Pour the batter into the prepared loaf pan.
  7. Bake in a preheated 350°F oven for 1 hour or until a toothpick inserted into the center comes out clean.
