Ingredients

  • 1 (8-inch) baked pie shell
  • 1/2 cup milk
  • 1 tablespoon grated orange rind
  • 1/2 pound marshmallows
  • 2 1/2 cups fresh cranberries
  • 1 cup whipped cream

Instructions

  1. Place marshmallows and milk in the top of a double boiler.
  2. Heat over hot water until marshmallows are melted.
  3. Chill the marshmallow mixture.
  4. Meanwhile, put the cranberries through a food chopper and drain off the juice.
  5. Fold the chopped cranberries and orange rind into the chilled marshmallow mixture.
  6. Pour the mixture into the baked pie shell.
  7. Top with whipped cream, if desired.
