Ingredients

  • 1 cup white raisins
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1/4 cup sugar
  • 2 eggs
  • 1 1/2 cups buttermilk
  • 3 tablespoons melted butter

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Wash the raisins, leaving them slightly moist.
  3. In a large bowl, combine flour, baking soda, baking powder, salt, and sugar.
  4. In a separate bowl, beat the eggs and then stir in buttermilk and melted butter.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Fold in the raisins.
  7. Pour the batter into a greased or parchment-lined baking dish.
  8. Bake in the preheated oven for about 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from oven and let cool slightly before slicing and serving.
