Ingredients

  • 1 lb navy beans
  • 2 pieces celery, diced
  • 1/4 lb lean ham, diced
  • salt to taste
  • pepper to taste
  • 2 carrots, diced
  • 1 large onion, diced

Instructions

  1. Rinse the navy beans thoroughly.
  2. Put the beans in a large cooking pan and cover with water, about three-quarters full.
  3. Add diced carrots, diced celery, diced onion, and diced ham to the pan.
  4. Cook on medium heat for about 1.5 hours, stirring occasionally and adding more water if needed.
  5. Add butter, salt, and pepper to taste.
  6. Cook for an additional hour or until the beans are tender.
  7. You can cook with the lid on or off the pan depending on your preference.
  8. Adjust the water to make the soup as thin or thick as you like.
