Ingredients

  • 6 venison chops, thick cut
  • 3 slices bacon
  • 3 tsp. olive oil
  • 1/2 tsp. coarse black pepper
  • 1/2 tsp. garlic salt
  • 1/2 tsp. parsley
  • 1/4 tsp. paprika
  • 2 tsp. red wine
  • 3 tsp. lemon juice

Instructions

  1. Mix olive oil, black pepper, garlic salt, parsley, paprika, red wine, and lemon juice together and rub each chop with the mixture.
  2. Place the chops in a flat dish and pour the marinade over them.
  3. Chill for about 4 hours.
  4. When ready to cook, wipe each chop with a damp cloth to remove excess marinade.
  5. Rub both sides of the chops with olive oil.
  6. Wrap each chop with a slice of bacon and secure with a toothpick.
  7. Grill on an open grill for about 15 minutes.
  8. Serve immediately.
