Ingredients

  • 16 oz. brown beans
  • 1 pkg. taco powder
  • 1 cup chopped onion
  • 1 cup chopped tomatoes
  • 2 cups chopped lettuce
  • salsa
  • 1 pkg. flour tortillas
  • Cheddar cheese, shredded

Instructions

  1. Sort, wash, and cook brown beans in a crock-pot until tender.
  2. Add taco powder and mix well.
  3. Drain off juice and mash beans or leave whole.
  4. Spoon bean mixture onto flour tortillas according to desired amount.
  5. Add chopped onion, tomatoes, lettuce, salsa, and shredded Cheddar cheese as desired, then roll up.
