Ingredients

  • 2 cans refried beans
  • 2 cups mashed avocados (about 3 or 4 avocados)
  • 1 package taco seasoning
  • 1/2 cup salsa
  • 1/3 cup sour cream
  • 1/2 cup mayonnaise
  • 1 (8 oz.) package Cheddar cheese, grated
  • 1 1/2 cups chopped ripe tomatoes
  • 1 cup chopped green onions
  • 1 small can black olives (optional)
  • 1/4 teaspoon salt
  • 1 teaspoon lemon juice

Instructions

  1. Mix the refried beans with half a package of taco seasoning until well combined.
  2. Spread the bean mixture evenly in the bottom of a serving dish to form the first layer.
  3. In a separate bowl, mash the avocados and mix with lemon juice and salt to prepare the second layer.
  4. Spread the mashed avocado evenly over the bean layer.
  5. Top with salsa, sour cream, and mayonnaise to create the subsequent layers.
  6. Sprinkle grated Cheddar cheese over the top.
  7. Add chopped ripe tomatoes and green onions as toppings.
  8. Optionally, garnish with sliced black olives.
  9. Chill briefly before serving to allow flavors to meld.
