Homemade enchiladas feature tender corn tortillas filled with flavorful beef, chili, onions, and melted cheese, then baked to perfection. Ingredients

  • 1 lb ground beef
  • 2 cans Armour Star chili with beans
  • 2 large onions
  • 1.5 lb Velveeta cheese
  • 12 soft corn tortillas

Instructions

  1. Preheat oven to 350°F.
  2. Fry ground beef in a skillet until cooked through.
  3. Add canned chili with beans to the cooked beef.
  4. Rinse chili cans with a little water and add to the beef and chili mixture.
  5. Chop the onions finely.
  6. Grate the Velveeta cheese.
  7. Separate the corn tortillas.
  8. Place a tablespoon or more of beef and chili mixture on each tortilla.
  9. Sprinkle chopped onions and grated cheese on each tortilla.
  10. Roll each tortilla and place it seam-side down in a baking dish.
  11. Pour the remaining beef and chili mixture over the rolled tortillas.
  12. Sprinkle chopped onions on top of the dish.
  13. Sprinkle remaining cheese over everything.
  14. Bake in the preheated oven for approximately 10 minutes until cheese is melted and bubbly.
