Ingredients

  • 1 lb. ground beef
  • 1/2 cup diced onions
  • dash of salt
  • dash of pepper
  • 10 oz. can enchilada sauce
  • 1 can stewed tomatoes
  • 6 to 7 flour tortillas
  • 8 oz. sour cream
  • Monterey Jack cheese

Instructions

  1. Brown ground beef in a skillet and drain excess fat.
  2. Add enchilada sauce, stewed tomatoes, diced onions, salt, and pepper; bring to a boil and simmer.
  3. Spread sour cream on each tortilla and fold in half.
  4. Spread enough sauce to cover the bottom of a 13 x 9-inch baking dish.
  5. Place the folded tortillas on top of the sauce in the dish.
  6. Pour the remaining sauce over the tortillas.
  7. Sprinkle Monterey Jack or Cheddar cheese and mozzarella cheese on top.
  8. Bake at 350°F for 15 minutes until cheese is melted and bubbly.
