Ingredients

  • 1 onion, chopped
  • 1 lb. ground beef
  • 2 Tbsp. margarine
  • 1 (16 oz.) can stewed tomatoes
  • 1 (17 oz.) can corn
  • 1 c. sour cream
  • 1 (4 1/2 oz.) jar sliced olives
  • 2 tsp. salt
  • 1 Tbsp. chili powder
  • 1/2 tsp. cumin
  • 2 c. Monterey Jack, shredded
  • 1 c. corn meal

Instructions

  1. Melt margarine in a large skillet with a cover.
  2. Add chopped onion and ground beef; cook until lightly browned.
  3. Add stewed tomatoes, corn with liquid, sour cream, corn meal, sliced olives, salt, chili powder, and cumin.
  4. Stir until thoroughly mixed.
  5. Sprinkle with shredded Monterey Jack cheese.
  6. Cover and simmer for 20 minutes.
