Hominy Stew

Ingredients

  • 1 1/2 lb. beef stew, cut in 1/2 inch pieces
  • 4 c. water
  • 1/2 c. chopped onion
  • 1 clove garlic, minced
  • 1/2 Tbsp. ground cumin
  • 1 1/2 tsp. salt
  • 2 15 oz. cans hominy, drained
  • 1 10 oz. can tomatoes with green chilies
  • 1/2 c. cold water
  • 1/4 c. all-purpose flour
  • shredded cabbage
  • sliced green onions

Instructions

  1. In 3 qt. saucepan combine beef, the 4 cups water, onion, garlic and salt. Cover simmer 1 1/2 hours; add hominy, undrained tomatoes with chilies and cumin.
  2. Cover and simmer 30 minutes more. Blend the 1/2 c. cold water into flour, add to beef mixture; cook and stir till thickened and bubbly.
  3. Serve in bowls; top with shredded cabbage and green onions, if desired.
  4. Makes 6 - 8 servings.
