Ingredients

  • 1 Canada goose breast, skinned, boned and split into halves
  • 2 skinned Canada goose legs
  • honey
  • hickory salt
  • 5 medium potatoes
  • 6 large carrots
  • 5 onions

Instructions

  1. Preheat oven to 325°F (163°C).
  2. Clean and cut onions, carrots, and potatoes into bite-sized pieces.
  3. Pour one cup of melted bacon grease into the bottom of a large casserole dish.
  4. Cook carrots and potatoes in the microwave oven on High for five minutes.
  5. Season goose breasts and legs with honey and hickory salt.
  6. Place the seasoned goose in the casserole dish with the vegetables.
  7. Roast in the preheated oven for approximately 1 hour, or until the goose is cooked through and vegetables are tender.
