Ingredients

  • 1/2 lb bacon
  • 3 lb potatoes
  • 4 hard-boiled eggs
  • 1 1/2 cups water
  • 1 1/2 cups vinegar
  • 1 1/2 cups sugar
  • salt to taste
  • pepper to taste
  • minced onion to taste

Instructions

  1. Boil small potatoes until tender; peel and slice into a bowl when cooled.
  2. Fry or microwave bacon until crisp; measure slightly less than 1/2 cup of bacon fat or bits.
  3. Combine the bacon, water, vinegar, sugar, salt, pepper, and minced onion; bring to a boil and cook vigorously for more than 5 minutes.
  4. Pour the hot dressing over the sliced potatoes and chopped hard-boiled eggs; toss gently to combine.
  5. Chill before serving for best flavor.
