Ingredients

  • 1 egg
  • 3/4 cup milk
  • 1/2 cup chopped nuts
  • 1/3 cup vegetable oil
  • 1/4 cup honey
  • 2 cups whole wheat or all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt

Instructions

  1. Heat oven to 400°F.
  2. Grease bottoms only of about 12 medium muffin cups.
  3. Beat the egg. Stir in milk, chopped nuts, vegetable oil, and honey.
  4. Stir in the remaining ingredients all at once just until the flour is moistened; batter will be lumpy.
  5. Fill muffin cups about 3/4 full.
  6. Sprinkle with sugar, if desired.
  7. Bake until golden brown, about 20 minutes.
  8. Remove muffins immediately from pan.
