- Heat oven to 400°F.
- Grease bottoms only of about 12 medium muffin cups.
- Beat the egg. Stir in milk, chopped nuts, vegetable oil, and honey.
- Stir in the remaining ingredients all at once just until the flour is moistened; batter will be lumpy.
- Fill muffin cups about 3/4 full.
- Sprinkle with sugar, if desired.
- Bake until golden brown, about 20 minutes.
- Remove muffins immediately from pan.
