Ingredients

  • 1/2 cup oleo or butter
  • 1/2 cup honey
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 2/3 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup quick rolled oats
  • 1 cup flaked coconut
  • 1/2 cup chopped nuts

Instructions

  1. Cream butter, honey, and sugar until light and fluffy.
  2. Add egg and vanilla; beat well.
  3. Sift together flour, baking soda, baking powder, and salt. Add to the creamed mixture.
  4. Stir in oatmeal, coconut, and nuts.
  5. Spread the mixture in a greased 13 x 9-inch baking pan.
  6. Bake in a 350°F oven for 20 to 25 minutes.
  7. Allow to cool, then cut into bars about 1 1/2 x 2 1/2 inches.
