Ingredients

  • 1 cake yeast
  • 1/4 cup warm water
  • 1 cup boiling water
  • 1 cup yellow corn meal
  • 3/4 cup scalded milk
  • 1/4 cup sugar
  • 2 teaspoons salt
  • 1/2 cup melted butter
  • 1 egg
  • 4 cups sifted flour
  • 1 teaspoon baking soda

Instructions

  1. Combine yeast in warm water with a pinch of sugar; set aside.
  2. In a large bowl, mix corn meal, hot water, milk, sugar, salt, melted butter, egg, and yeast mixture.
  3. Mix well until ingredients are combined.
  4. Add sifted flour and baking soda; knead the dough for 5 minutes.
  5. Place the dough in a greased bowl and let rise for 2 hours.
  6. Punch down the dough and let it rise a second time for 1 hour.
  7. Preheat oven to 350°F (175°C).
  8. Shape the dough and place in pie pans or baking pans.
  9. Bake in the oven for 25 minutes until golden brown.
