Ingredients

  • 1 c. grated carrot and zucchini
  • 1/2 c. whole wheat flour
  • 1/2 c. white flour
  • 1/4 c. wheat germ
  • 1 egg
  • 1/4 c. oil
  • 1/2 c. crushed pineapple, drained
  • 1/2 c. applesauce
  • 1/4 c. brown sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1/2 c. raisins
  • 1/3 c. molasses
  • 1/2 tsp. cinnamon

Instructions

  1. Mix dry ingredients; set aside.
  2. Mix oil, egg, and molasses in a bowl.
  3. Add grated carrot and zucchini to the wet mixture.
  4. Gradually incorporate the dry ingredients into the wet mixture.
  5. Pour the batter into a lightly oiled 9 x 5-inch loaf pan.
  6. Bake at 350°F (175°C) for approximately 50 minutes or until a toothpick inserted into the center comes out clean.
