Ingredients

  • 3/4 cup brown sugar
  • 1 envelope unflavored gelatin
  • 1/2 teaspoon salt
  • 2 teaspoons pumpkin pie spice
  • 1 1/4 cups cooked pumpkin
  • 3/4 cup milk
  • 3 eggs, separated
  • 1/3 cup sugar
  • pastry for 9-inch pie, baked

Instructions

  1. In a large saucepan, combine brown sugar, unflavored gelatin, salt, pumpkin pie spice, cooked pumpkin, milk, and slightly beaten egg yolks.
  2. Cook over medium heat, stirring often, until thickened. Remove from heat and let cool.
  3. Beat egg whites with sugar until stiff peaks form.
  4. Fold the beaten egg whites into the cooled pumpkin mixture.
  5. Pour the mixture into the baked pie pastry shell.
  6. Refrigerate until set, then serve topped with whipped cream or topping of choice.
