Ingredients

  • 16 oz black-eyed peas
  • 1 cup chopped onion
  • 1 cup uncooked rice
  • 1 lb sausage
  • 1/2 cup chopped green pepper
  • 1/2 cup chopped red pepper
  • salt

Instructions

  1. Cook the black-eyed peas in a large saucepan according to the package instructions until almost done.
  2. Add the chopped onion, green pepper, red pepper, and browned sausage to the peas.
  3. Simmer until the peas are tender, about 30 minutes.
  4. Add warm water until there is enough pot liquor to your preference.
  5. Serve hot with cornbread and slaw.
