Ingredients

  • 10 to 12 potatoes, peeled, sliced, cooked and cooled
  • 1 large onion, chopped
  • 1 green pepper, chopped
  • 1/4 tsp. parsley flakes
  • 4 slices cubed bread
  • 1 small jar pimentos, drained and chopped
  • 1 lb. Velveeta cheese, cubed
  • 1 c. melted margarine
  • 3/4 c. milk
  • 1/4 tsp. pepper

Instructions

  1. Mix all ingredients in a large bowl.
  2. Pour melted margarine mixed with milk over the mixture.
  3. Bake at 350°F (175°C) for 45 minutes until bubbly and golden.
