Ingredients

  • 12 hard shell clams (3 to 4 inches across)
  • 1/2 stick butter, melted
  • 1 Tbsp parsley, chopped fine
  • 1 stalk celery, chopped fine
  • 1 clove garlic, minced
  • 1/2 cup sweet onions, chopped fine
  • 1/4 to 1/2 cup unflavored bread crumbs
  • 1 (4 oz.) jar sliced mushrooms, drained
  • 2 eggs, beaten

Instructions

  1. Scrub and shuck the clams, then save the shells and reserve the liquid.
  2. Chop the clams into small pieces.
  3. Preheat oven to 375°F (190°C).
  4. Combine melted butter, chopped parsley, chopped celery, minced garlic, chopped onions, drained sliced mushrooms, and beaten eggs in a bowl.
  5. Add bread crumbs gradually until the mixture reaches a thick but spreadable consistency.
  6. Stuff the clam shells with the mixture.
  7. Place the stuffed shells on a baking dish and bake for about 15 minutes, until golden brown on top.
  8. Serve hot, garnished with additional parsley if desired.
