Ingredients

  • 1 Tbsp. salt
  • 1 tsp. sugar
  • 1 tsp. dill seed
  • 1 large clove garlic
  • 2 onions
  • 1/2 c. jalapeno peppers
  • 2 ribs celery
  • 1/2 lb. carrots
  • 1 c. vinegar
  • 1 c. water

Instructions

  1. In a sterilized quart jar, place the salt, sugar, dill seed, and garlic.
  2. Prepare the vegetables: onions, jalapeno peppers, celery, and carrots, and add them to the jar in layers.
  3. Combine vinegar and water in a small saucepan and bring to a boil.
  4. Pour the hot vinegar mixture over the vegetables in the jar.
  5. Cover the jar with a lid and let it cool.
  6. Refrigerate the jar; the hot mix keeps indefinitely in the refrigerator.
