Ingredients

  • 3/4 cup pureed red or green sweet peppers
  • 1/4 cup pureed hot peppers
  • 1/2 cup pureed onions
  • 6 1/2 cups sugar
  • 1 1/2 cups white vinegar
  • 1 bottle liquid fruit pectin
  • red or green food coloring

Instructions

  1. Wash peppers well, remove spots, and cut into pieces.
  2. Puree the peppers in a blender or food processor.
  3. Quarter the onions and puree them.
  4. In a 3-quart microwave-safe bowl, mix the pureed peppers, onions, sugar, and vinegar.
  5. Microwave on High, uncovered, for about 12 minutes until the mixture reaches a brisk boil.
  6. Boil on High for 5 minutes.
  7. Add liquid fruit pectin and a few drops of food coloring to the mixture.
  8. Microwave on High for about 5 minutes until the mixture returns to a boil.
  9. Boil for 1 minute longer.
  10. Skim foam with a large spoon.
  11. Pour the hot jam immediately into sterilized jars, leaving 1/8 inch of headspace.
  12. Wipe the rims of the jars clean.
  13. Adjust the jar lids securely.
  14. Process the jars in a boiling water bath for 5 minutes.
