- Wash peppers well, remove spots, and cut into pieces.
- Puree the peppers in a blender or food processor.
- Quarter the onions and puree them.
- In a 3-quart microwave-safe bowl, mix the pureed peppers, onions, sugar, and vinegar.
- Microwave on High, uncovered, for about 12 minutes until the mixture reaches a brisk boil.
- Boil on High for 5 minutes.
- Add liquid fruit pectin and a few drops of food coloring to the mixture.
- Microwave on High for about 5 minutes until the mixture returns to a boil.
- Boil for 1 minute longer.
- Skim foam with a large spoon.
- Pour the hot jam immediately into sterilized jars, leaving 1/8 inch of headspace.
- Wipe the rims of the jars clean.
- Adjust the jar lids securely.
- Process the jars in a boiling water bath for 5 minutes.
