Hot sausage rolls feature savory Polish sausages wrapped in flaky pastry, topped with mustard and baked to perfection—perfect as a snack, appetizer, or party treat.

Ingredients

  • 1 cup unsifted flour
  • 1/2 cup margarine (cold)
  • 1/2 cup small curd cottage cheese
  • 6 (5-inch) precooked Polish sausages
  • 1 tablespoon Dijon mustard
  • 1 egg
  • 1 tablespoon milk

Instructions

  1. Cut the margarine into 1/2-inch pieces.
  2. Cut the margarine into the flour until the mixture resembles pea-sized crumbs.
  3. Stir in cottage cheese until a stiff dough forms.
  4. Add 2 to 3 teaspoons of ice water to the dough.
  5. Divide the dough into 6 equal parts.
  6. Roll each part into a rectangle approximately 6 inches long and 3 inches wide.
  7. Spread each rectangle with 1 teaspoon of Dijon mustard.
  8. Place a precooked Polish sausage on each rectangle.
  9. Roll the pastry around the sausage, encasing it completely.
  10. Brush the sealed edges with water to seal the pastry.
  11. Seal the ends of each roll.
  12. Place the rolls seam side down on a cookie sheet and prick each once or twice with a fork.
  13. Mix the egg and milk together.
  14. Brush the tops of the pastries with the egg wash.
  15. Bake at 400°F for 20 to 25 minutes or until nicely browned.
  16. Slice into 1-inch pieces and arrange on a serving tray.
