Ingredients

  • 2 lb. cod fillets
  • 8 oz. French dressing
  • 1 c. chopped celery
  • 1 can mushrooms
  • 1 c. light mayonnaise
  • 1 c. milk
  • 10 oz. Swiss cheese, grated
  • 8 crushed Ritz crackers

Instructions

  1. Cut the cod fillets into bite-sized pieces and marinate in French dressing for 2 hours.
  2. Add chopped celery and canned mushrooms to the marinated fish.
  3. Mix light mayonnaise, milk, and grated Swiss cheese in a bowl.
  4. Combine the fish, vegetables, and cheese mixture together.
  5. Place the mixture into a casserole dish.
  6. Sprinkle crushed Ritz crackers tossed in melted butter over the top of the casserole.
  7. Bake at 350°F for 25 to 30 minutes until bubbly and golden.
