Ingredients

  • 4 or 5 medium squash, sliced
  • 3 Tbsp. butter
  • 1/2 lb. American or Velveeta cheese
  • 1 onion, chopped
  • 1 jalapeno pepper, chopped
  • bread crumbs

Instructions

  1. Cook the sliced squash and chopped onion in butter and a little water until tender; drain.
  2. Add chopped jalapeno pepper and cheese; stir until cheese melts.
  3. Transfer the mixture to a baking dish, top with bread crumbs.
  4. Bake in a preheated oven at 350°F for about 20 minutes or until browned.
