Ingredients

  • 2 1/2 cups flour
  • 1 cup sugar
  • 2 teaspoons baking soda
  • 1 stick unsalted butter
  • 2 large eggs
  • 3/4 cup orange juice
  • 1 tablespoon grated orange peel
  • 1 cup dried cranberries

Instructions

  1. In a medium bowl, stir together flour, sugar, and baking soda; set aside.
  2. In a separate bowl, stir in melted and cooled butter, eggs, orange juice, and orange peel.
  3. Stir the liquid mixture into the dry mixture until just combined.
  4. Fold in dried cranberries.
  5. If using topping, stir together 1/4 cup sugar and cinnamon in a small bowl.
  6. Spoon batter into 12 paper-lined muffin tins.
  7. Sprinkle topping on top, if desired.
  8. Bake at 350°F (175°C) for 20 to 25 minutes or until lightly browned and a toothpick inserted near the center comes out clean.
