Hot Tuna Puffs are savory bite-sized canapés featuring a creamy tuna mixture on crispy Melba toast, lightly browned in the oven, perfect for entertaining or a quick appetizer.

Ingredients

  • 7 oz. can tuna
  • 1/4 cup mayonnaise or salad dressing
  • 1 tablespoon catsup
  • 1 tablespoon vinegar
  • dash of salt
  • few grains cayenne pepper
  • 2 or 3 drops Worcestershire sauce
  • about 24 Melba toast rounds
  • parsley sprigs

Instructions

  1. Drain the tuna and flake it finely.
  2. Mix the tuna with mayonnaise, catsup, vinegar, salt, cayenne pepper, and Worcestershire sauce.
  3. Spoon the tuna mixture onto the Melba toast rounds.
  4. Place the prepared toasts on a cookie sheet and broil about 3 to 4 inches from heat for 1 to 2 minutes, or until lightly browned.
  5. Garnish each canapé with a tiny parsley sprig.
