Hummus Bake With Red Bell Pepper and Cheese
Ingredients
- 12 cup chickpeas (cooked) ⓘ
- 14 cup applesauce ⓘ
- 18 cup olive oil ⓘ
- 18 cup water (more or less) ⓘ
- 1 12 tablespoons tahini (sesame paste) ⓘ
- 14 teaspoon garlic powder ⓘ
- 18 teaspoon onion powder ⓘ
- 18 teaspoon cayenne pepper ⓘ
- 18 teaspoon chili powder ⓘ
- 18 teaspoon ground cumin ⓘ
- 1 pinch ground coriander ⓘ
- 1 red bell pepper, chopped (can use other colours, too) ⓘ
- 50 g cheddar cheese, grated ⓘ
Instructions
- First make your hummus: Combine chickpeas, applesauce, oil, water, tahini and spices in a tall bowl.
- Using a hand-held blender whizz into a smooth paste.
- It may be runnier than normal hummus, but that will change during baking, so just leave it like that (You can also use your food processor for this).
- Pour the hummus into a small oven proof dish.
- Sprinkle with the chopped bell pepper and cheese.
- Bake in the preheated oven at 180C/350F for 15-20 minutes.
