  • 1 to 3 lemons
  • 2 Tbsp. cold water
  • 4 to 5 sprigs parsley
  • 6 c. cold water
  • 4 garlic cloves
  • 5 generous Tbsp. tahini

  1. Soak the dried chickpeas overnight in cold water after checking for small stones and blemished peas.
  2. Wash and rinse the chickpeas several times.
  3. Put the chickpeas in a pot with 6 cups of cold water and bring to a boil.
  4. Cook on high until the chickpeas are easily mashed between two fingers, then they are done.
