Ingredients

  • 30 oz. chickpeas (2 cans of 15 oz. each)
  • 1/3 cup fresh lemon juice
  • 1/2 cup ground sesame seed oil
  • 3 cloves garlic
  • 1 tablespoon snipped fresh mint
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • mint leaves (optional)

Instructions

  1. Drain the liquid from the chickpeas and reserve 1/4 cup of the liquid.
  2. Place the chickpeas, lemon juice, and reserved liquid in a blender container and cover.
  3. Puree until smooth, scraping the sides of the container frequently with a spatula.
  4. Transfer the chickpea mixture to a medium-sized bowl and stir in sesame seed oil, crushed garlic, snipped mint, and salt.
  5. Pour the chickpea mixture into a shallow serving bowl and make a well in the center.
  6. Pour olive oil into the well.
  7. Garnish with mint leaves, olives, and parsley as desired.
