  • 1 small chopped onion
  • 1 stalk celery, chopped
  • 1 carrot, chopped
  • 16 oz. can stewed tomatoes
  • 8 cups water
  • 1 bouillon cube
  • 2 Tbsp. vinegar
  • freshly ground pepper

  2. Cook on low for 6 hours, or set the crock-pot to high and cook for 6 hours.
  3. Add freshly ground pepper to taste.
  4. Optional: Add two chopped Italian sausages to the ingredients before cooking for a different flavor.

Tips & Substitutions

For a heartier version, consider adding two chopped Italian sausages before cooking. If you prefer a thicker soup, blend a portion of the lentils with some cooking liquid and stir it back into the pot. Feel free to substitute the frozen spinach with fresh spinach; just add it in the last 10-15 minutes of cooking. Using canned tomatoes enhances the flavor and is a great time saver.

Serving Suggestions

Serve this lentil spinach soup with a crusty bread or a side of Mediterranean Pilaf for a fulfilling meal. A light Spinach-Mushroom Salad can complement the flavors wonderfully. For an extra touch, drizzle with a little olive oil and serve with Marinated Olives on the side for a delightful Mediterranean-inspired dinner.

Storage & Reheating

Store any leftover soup in an airtight container in the refrigerator for up to 5 days. To reheat, gently warm on the stove over low heat, adding a splash of water if it has thickened. It can also be reheated in the microwave; just ensure to cover it and stir halfway through for even heating.

How can I enhance the flavor of the soup?
