Hungarian pancakes are crispy potato fritters with savory flavors, perfect for brunch or a hearty snack, served with sour cream and applesauce for extra richness.

Ingredients

  • 4 large potatoes
  • 1 small onion
  • 1 large egg
  • 2 Tbsp all-purpose flour
  • 1 tsp salt
  • 1/4 tsp black pepper
  • vegetable oil
  • sour cream

Instructions

  1. Preheat oven to 200° F.
  2. Line a baking sheet with paper towels, using two layers if desired.
  3. Wash, peel, and coarsely grate the potatoes and onion.
  4. Stir in the egg, flour, salt, and pepper until well combined.
  5. Heat 1/2 inch of vegetable oil in a large skillet over moderately high heat.
  6. Drop heaping tablespoons of the potato mixture into the hot oil.
  7. Flatten each with a spatula and fry about 4 minutes until edges are crispy.
  8. Turn and cook for about 1 minute more until golden.
  9. Remove the pancakes to the prepared baking sheet and keep warm in the oven.
  10. Repeat until all mixture is used.
  11. Serve topped with sour cream and pass with applesauce.
