Ingredients

  • 1 cup rice
  • 5 slices bacon
  • 1/3 cup green onions
  • 1 or 2 tablespoons soy sauce
  • 1 (16 oz.) can peas and carrots

Instructions

  1. Cook rice as package directs.
  2. In a 10-inch skillet, cook bacon until crisp; drain, reserving 2 tablespoons of drippings.
  3. Stir in cooked rice and sliced green onions.
  4. Cook over low heat for 5 minutes, stirring occasionally.
  5. Stir in soy sauce.
  6. Season to taste with pepper.
  7. Add drained peas and carrots; gently toss.
  8. Cover and heat through.
