Ingredients

  • 2 cups chopped zucchini
  • 1 cup chopped tomato
  • 1/2 cup chopped onion
  • 1/2 cup grated Parmesan cheese
  • 1 1/2 cups milk
  • 3/4 cup Bisquick baking mix
  • 3 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Instructions

  1. Preheat oven to 400°F.
  2. Grease a 10-inch quiche dish.
  3. Sprinkle chopped zucchini, tomato, onion, and Parmesan cheese into the dish.
  4. In a blender, beat the milk, Bisquick baking mix, eggs, salt, and pepper until smooth, about 15 seconds.
