A hearty beef curry featuring tender beef cubes simmered in a flavorful tomato and onion sauce with curry spices, ideal for comforting family dinners.

Ingredients

  • 1 Tbsp. flour
  • 1 1/8 tsp. salt
  • 1/8 tsp. pepper
  • 1 lb. beef (round), cut into 3-inch cubes
  • 2 c. sliced onions
  • 1/2 garlic clove, minced
  • 1 tsp. curry powder
  • 1 beef bouillon cube
  • 1/2 c. tomato juice

Instructions

  1. About 1 1/2 hours before serving, combine flour, salt, and pepper on wax paper.
  2. Roll the beef cubes in the flour mixture to coat evenly.
  3. In a large pot, sauté sliced onions until translucent.
  4. Add minced garlic and curry powder; cook for 1 minute.
  5. Add the coated beef cubes to the pot and brown on all sides.
  6. Crush the beef bouillon cube and add it to the pot.
  7. Pour in tomato juice and bring to a boil.
  8. Reduce heat, cover, and simmer for about 1 1/2 hours or until the beef is tender.
  9. Serve hot with rice or bread.
