Ingredients

  • 1 medium eggplant (about 1 1/2 lbs)
  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp salt
  • 1 tsp turmeric (optional)
  • 2 tsp curry powder (optional)
  • 1 cup milk
  • 1 egg
  • 1/4 cup salad oil

Instructions

  1. Wash the eggplant.
  2. Beat the flour, baking powder, salt, turmeric (if using), curry powder (if using), milk, and egg until smooth.
  3. Heat oil to 375°F in a large skillet, enough to submerge the eggplant slices about 1 inch deep.
