Ingredients

  • 1 pkg. yellow cake mix
  • 1/2 c. vegetable oil
  • 4 eggs
  • 1 Tbsp. vanilla extract
  • 1 Tbsp. lemon extract
  • 1 c. candied cherries, chopped
  • 1 c. candied pineapple, chopped
  • 2 c. pecans, chopped
  • 1 (6 oz.) pkg. instant pudding

Instructions

  1. Combine vegetable oil and eggs with the cake mix until well blended.
  2. Add chopped candied cherries, chopped candied pineapple, chopped pecans, and the instant pudding to the mixture.
  3. Pour the batter into a large tube pan.
  4. Bake at 300°F for 45 minutes until a toothpick inserted in the center comes out clean.
