Irish Stew(Crock-Pot)
Hearty Irish stew with tender lamb, vegetables, and savory flavors, slow-cooked to perfection—ideal for comforting family dinners or chilly evenings.
Ingredients
- 2 lbs boneless lamb, cubed ⓘ
- 2 tsp salt ⓘ
- 1/4 tsp pepper ⓘ
- 2 c water ⓘ
- 1 small whole bay leaf ⓘ
- 2 medium carrots, peeled and sliced in 1/2 inch pieces ⓘ
- 2 small onions, thinly sliced ⓘ
- 3-4 medium potatoes, pared and quartered or 15 oz can of new whole potatoes, drained ⓘ
- 1/4 c quick-cooking tapioca (optional) ⓘ
- 1 10 oz package frozen peas or mixed vegetables ⓘ
Instructions
- In your Crock-Pot, season cubed lamb with salt and pepper.
- Add water, bay leaf, carrots, onions, potatoes or canned potatoes, and tapioca if using.
- Stir well to combine all ingredients.
- Cover and cook on Low for 10 to 12 hours.
- During the last 1 to 2 hours of cooking, add the peas or mixed vegetables.
