Ingredients

  • 2 lbs boneless lamb, cubed
  • 2 tsp salt
  • 1/4 tsp pepper
  • 2 c water
  • 1 small whole bay leaf
  • 2 medium carrots, peeled and sliced in 1/2 inch pieces
  • 2 small onions, thinly sliced
  • 3-4 medium potatoes, pared and quartered or 15 oz can of new whole potatoes, drained
  • 1/4 c quick-cooking tapioca (optional)
  • 1 10 oz package frozen peas or mixed vegetables

Instructions

  1. In your Crock-Pot, season cubed lamb with salt and pepper.
  2. Add water, bay leaf, carrots, onions, potatoes or canned potatoes, and tapioca if using.
  3. Stir well to combine all ingredients.
  4. Cover and cook on Low for 10 to 12 hours.
  5. During the last 1 to 2 hours of cooking, add the peas or mixed vegetables.
