Island Delight offers a tropical-inspired treat with coconut, pecans, and rich brown sugar, perfect for sweet snacking or special occasions with a crunchy, chewy texture.

- Mix together softened butter, 2 cups of sifted flour, and 1 cup of light brown sugar.
- Spread evenly in a jellyroll pan and bake for 12 minutes at 350°F.
- Remove from oven and cool.
- Mix remaining ingredients: 2 cups of dark brown sugar, shredded coconut, chopped pecans or walnuts, salt, vanilla, and 1/4 cup of Gold Medal flour.
- Pour the mixture over the cooled crust.
- Bake at 325°F for 25 minutes or until slightly set.
- Do not overbake.
- Cool thoroughly.
- Sprinkle powdered sugar on top once completely cool and cut into small squares.
