Ingredients

  • 1 1/2 lb. fresh shrimp
  • 1 stick oleo
  • 1 clove garlic, chopped
  • 1 large onion
  • 1 sweet red pepper
  • 1 green pepper
  • salt and pepper
  • 2 c. rice
  • Fried Bananas

Instructions

  1. Clean and devein the shrimp.
  2. Melt oleo in an oven-safe skillet and broil until melted.
  3. Add shrimp and chopped garlic to the skillet and broil until shrimp are pink.
  4. Remove shrimp and set aside.
  5. Add chopped onion and red and green peppers to the skillet.
  6. Broil until tender but crisp, about 10 to 15 minutes.
  7. Return shrimp to the skillet and heat until hot. Season with salt and pepper to taste.
  8. Prepare rice according to package instructions.
  9. Serve the shrimp and vegetables over the cooked rice, with fried bananas on the side.
