Ingredients

  • 1 medium eggplant, pared and cut in 1/2-inch slices
  • 1/2 cup butter or margarine, melted
  • 3/4 cup fine dry bread crumbs
  • 1/4 teaspoon salt
  • 1 can spaghetti sauce with mushrooms (8 or 10 oz.)
  • 1 tablespoon dried oregano, crushed
  • 4 ounces mozzarella cheese, shredded

Instructions

  1. Dip eggplant slices in melted butter, then in a mixture of bread crumbs and salt.
  2. Place the coated eggplant slices on a greased baking sheet.
  3. Spoon spaghetti sauce with mushrooms on top of each slice.
  4. Sprinkle with dried oregano and shredded mozzarella cheese.
  5. Bake in a hot oven at 450°F for 10 to 12 minutes or until done.
