Instructions
- Place lentils in a saucepan with enough boiling water to cover and lightly boil for 30 minutes, adding more water if needed.
- Add stewed tomatoes, chopped onion, minced garlic, salt, oregano, cumin, and tomato paste to the saucepan.
- Simmer the mixture for an additional 30 minutes until the lentils are tender and flavors meld.
- Serve the lentil stew over rice. Especially nice with Mazidra.
