A hearty Italian lentil stew featuring tomatoes, garlic, and herbs, perfect for a comforting vegetarian meal that pairs well with rice and seasoned with aromatic spices.

Ingredients

  • 2 c. dry lentils
  • 2 c. stewed tomatoes
  • 1 onion, chopped
  • 2 cloves minced garlic
  • 1 tsp. salt
  • 1/2 tsp. oregano
  • 1/2 tsp. cumin
  • 6 oz. tomato paste

Instructions

  1. Place lentils in a saucepan with enough boiling water to cover and lightly boil for 30 minutes, adding more water if needed.
  2. Add stewed tomatoes, chopped onion, minced garlic, salt, oregano, cumin, and tomato paste to the saucepan.
  3. Simmer the mixture for an additional 30 minutes until the lentils are tender and flavors meld.
  4. Serve the lentil stew over rice. Especially nice with Mazidra.
