Creamy and hearty potato soup with cheese and bacon, perfect for comforting meals and suitable for family dinners or casual gatherings.

Ingredients

  • 4 large potatoes, diced
  • 2 stalks celery, chopped
  • 1/2 onion, chopped
  • 1 stick margarine
  • 1 clove garlic, chopped
  • 1/2 lb. Velveeta cheese, diced
  • 3 oz. Philadelphia cream cheese
  • 16 oz. can evaporated milk
  • salt and pepper to taste
  • 1/2 lb. bacon

Instructions

  1. Boil potatoes with celery, onions, and garlic in 2 1/2 cups water until potatoes are tender.
  2. Add margarine, Velveeta cheese, cream cheese, and evaporated milk to the pot.
  3. Mash with a potato masher until the soup is creamy and smooth.
  4. Season with salt and pepper to taste.
  5. Top with crumbled, fried bacon before serving.
