Ingredients

  • 1 medium eggplant
  • 1 cup flour
  • 1 cup ice water
  • 1 beaten egg
  • 2 Tbsp cooking oil
  • 1/2 tsp sugar
  • 1/2 tsp salt
  • grated Parmesan cheese

Instructions

  1. Cut the eggplant in half lengthwise and peel.
  2. Slice the eggplant into 1/2-inch thick pieces, then cut each slice into 1/2-inch strips.
  3. In a bowl, beat together the flour, ice water, beaten egg, cooking oil, sugar, and salt to make the batter.
  4. Dip the eggplant strips into the batter, ensuring they are well coated.
  5. Allow excess batter to drain off from the coated eggplant strips.
  6. Fry a few strips at a time in deep hot fat (365°F) for 4 to 5 minutes until golden brown.
  7. Drain the fried eggplant strips on paper towels.
  8. Sprinkle with grated Parmesan cheese before serving.
