Ingredients

  • 1 cup yellow cornmeal
  • 1 cup milk
  • 2 eggs
  • 3/4 teaspoon salt
  • 1 teaspoon soda
  • 1/2 cup bacon grease
  • 1 (8 oz) can corn
  • 2 pounds ground meat
  • 1 large onion
  • 1 pound grated yellow cheese

Instructions

  1. Combine cornmeal, milk, eggs, salt, soda, bacon grease, and corn in a bowl.
  2. Mix well until batter is smooth.
  3. Brown the ground meat until crumbly; drain well on a paper towel.
  4. Pour half the cornmeal batter into a well-greased skillet or baking dish.
  5. Sprinkle with grated cheese, then layer cooked meat, diced onion, and chopped jalapenos.
  6. Top with the remaining batter.
  7. Bake for about 50 minutes in a preheated oven until golden and cooked through.
