Ingredients

  • 2 eggs
  • 1/2 cup sugar
  • 1/3 cup melted butter
  • 2/3 cup milk
  • 1 3/4 cups all purpose flour
  • 1 Tbsp baking powder
  • 1 tsp grated lemon peel
  • 1/2 tsp salt

Instructions

  1. Mix eggs, sugar, melted butter, and milk in a bowl.
  2. Add flour, baking powder, lemon peel, and salt; blend well.
  3. Line a 12-cup muffin tin with paper cupcake holders.
  4. Fill each cup with half the batter, add a tablespoon of jam, then top with remaining batter.
  5. Bake at 400°F (200°C) for 20 to 25 minutes until golden.
