Jamaican Jungle Bread

Ingredients
- 1 1/2 cups all-purpose flour ⓘ
- 1/2 cup granulated sugar ⓘ
- 1 teaspoon baking soda ⓘ
- 1/2 teaspoon salt ⓘ
- 1/2 cup chopped toasted nuts ⓘ
- 1 cup quick oats ⓘ
- 1 teaspoon baking powder ⓘ
- 1 teaspoon cinnamon ⓘ
- 1/2 cup shredded coconut ⓘ
- 1 cup mashed bananas ⓘ
- 1 (8 oz) can crushed pineapple undrained ⓘ
- 1/4 cup vegetable oil ⓘ
- 2 eggs ⓘ
Instructions
- In a large bowl, stir together all-purpose flour, granulated sugar, baking soda, salt, chopped toasted nuts, quick oats, baking powder, and cinnamon.
- In a medium bowl, mix mashed bananas, crushed pineapple (undrained), vegetable oil, and eggs.
- Add the wet mixture all at once to the dry ingredients and stir just until the liquid is absorbed and the mixture is thoroughly moistened. Do not overmix.
- Pour the batter into a greased 9 x 5 x 3-inch loaf pan.
- Bake in a 350°F (175°C) oven for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean.
- Cool in the pan for 5 minutes, then loosen edges with a knife and turn the bread out onto a cooling rack.
- Cool completely before slicing. Glaze if desired.
