Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup chopped toasted nuts
  • 1 cup quick oats
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 cup shredded coconut
  • 1 cup mashed bananas
  • 1 (8 oz) can crushed pineapple undrained
  • 1/4 cup vegetable oil
  • 2 eggs

Instructions

  1. In a large bowl, stir together all-purpose flour, granulated sugar, baking soda, salt, chopped toasted nuts, quick oats, baking powder, and cinnamon.
  2. In a medium bowl, mix mashed bananas, crushed pineapple (undrained), vegetable oil, and eggs.
  3. Add the wet mixture all at once to the dry ingredients and stir just until the liquid is absorbed and the mixture is thoroughly moistened. Do not overmix.
  4. Pour the batter into a greased 9 x 5 x 3-inch loaf pan.
  5. Bake in a 350°F (175°C) oven for 50 to 55 minutes or until a wooden pick inserted in the center comes out clean.
  6. Cool in the pan for 5 minutes, then loosen edges with a knife and turn the bread out onto a cooling rack.
  7. Cool completely before slicing. Glaze if desired.
